Lemony Sponge Cake


Sponge cake can not only be served at parties, but can even be eaten at breakfast! So the sponge cake recipe should easy enough to be made every day. Here is such a sponge cake recipe which can be added in the list of quick and easy cakes to make.

Ingredients

  • ½ tsp cream of tartar
  • 1 cup white sugar
  • ¼ cup water
  • 1 tsp lemon extract
  • 6 eggs
  • 1 tsp lemon zest
  • 1 cup cake flour
  • ¼ tsp salt
Process

First, separate the eggs, then beat the egg yolk, until it turns dark yellow in color and very thick in consistency. Add in sugar, lemon rind, lemon extract and water. Beat well before adding flour. Now take another bowl and beat the egg white in it, until frothy. When frothy, add salt and cream of tartar in it. Mix well, until egg white is stiff, make sure that it does not become dry. Add this mixture to the yolk mixture, beat well and then pour the mixture into an non-greased tube pan which measures 9 inch. Bake at 165 degrees F for about 60 minutes.
